Link to Linda’s site and donation link: www.genaw.com In this Atkins Diet in the kitchen video, I make one of Linda’s recipes of Linda’s Low Carb Recipe site fame. It is Panna Cotta, and the ease and lack of ingredients (only 3) is amazing. It is super versatile and only limited by your access to good sugar free syrups like Torani and DaVinci. Here’s the recipe: www.genaw.com 1 envelope unflavored Knox gelatin 3 TBS SF syrup, like DaVinci or Torani 2 cups heavy cream 1/2 cup sugar free syrup In a small bowl, sprinkle the gelatin over 3 tablespoons syrup; let stand 5 minutes to soften. Bring the cream and 1/2 cup syrup to a simmer for about 6 minutes. Remove cream and syrup from the heat and add the gelatin mixture. Stir until the gelatin is completely melted. Pour mixture into 6 individual ramekins or small bowls. Cover the surface with plastic wrap. Chill until set. Makes 6 servings 279 Calories; 29g Fat; 3g Protein; 2.5g Net Carbs

This week’s episode is in response to a comment, and frustration on not losing on Induction. It can happen for many reasons, but here are a few practical examples of how to get over hump of Induction. * Get the Atkins Diet book (2002 DANDR) and read at minimum chapter 11 www.amazon.com * Memorize the rules and Acceptable Foods List, so you can read the ingredient labels for hidden sugars and starches * Eat the 12-20g per day with most coming from the 3 cups of vegetables, like peppers, mushrooms, etc. * Drink your water 64 oz each day * Drop any aspartame or faux sweeteners from your diet until the scale drops 5-10 pounds, and then add sparingly (1 additional serving per day) * Drop caffeine (also causes stalls) * Start posting your daily menus at a place like Fitday.com * Watch my “why am I not losing video?” There are a number of foods, which certain people may be more sensitive to, such as dairy or even eggs. These food sensitivities can impede weight loss. There are certainly other reasons for a less successful Induction, but the above ones should help eliminate the most common pitfalls of Induction. One final thought, though, weight loss is only one reason or result of Induction. There are others – energy, health benefits of stabilizing blood sugars, setting the stage for future weight loss, and finally once and for all proving you can control your eating and what enters your mouth.

I was hired as a weight loss consultant at my local Jenny Craig center. I’d like some opinions on whether or not it is a good job for a nutrition major. Thanks!

Over time, elevated blood sugar and insulin levels can damage kidneys beyond repair. The majority of amputations performed in all hospitals are directly related to diabetes. Diabetes so damages the circulation that even the smallest wounds can fail to heal, leading to amputations. Almost every diabetic has problems with cholesterol elevation. This is due to the diseases effect on the liver. Elevated cholesterol and diabetes is caused when the liver becomes toxic, from free radicals, and can no longer regulate cholesterol levels. Type II diabetics are also at a much higher risk for heart attacks. All of these complications can be greatly reduced or even eliminated by gaining control over blood sugar and insulin levels. The symptoms revolving around both diabetes and hypoglycemia are often referred to as syndrome X. These include elevated cholesterol, blood pressure, and often a severe overweight situation. When excess insulin is produced its primary
